About 3 weeks ago my mom sends me a message with a link to this blueberry lemon cake and tells me “can I please have this for my birthday.” My mother literally never says no to me so I said no problem. Looking into the cake further I realized it was not as easy as I originally thought. The cake is 3 layers with the top and bottom being a lemon cake with fresh blueberries with a middle layer of blueberry cheesecake and everything covered in a lemon cream cheese frosting. I immediately thought of a cake I made for Vera a couple of years ago with lemon cream cheese frosting and I had difficulty piping the icing cause it wasn’t properly mixed together. I started the cake Sunday evening cause my family was coming over the following day, I started my making candied lemon slices cause I figured this would make a nice garnish paired with fresh blueberries. The cake part was not that difficult just had to make sure I coated the fresh blueberries in flour cause skipping this step would mean all the blueberries would sink to the bottom of the batter. The blueberry cheesecake looked ok but it was a bit thin (maybe I overmixed the batter) anyway I out all 3 layers in fridge to assemble the next day. I left out my butter and cream cheese overnight so I can be sure it will all mix together, once the frosting was done I added it to a piping back and began piping rosettes. The first layer looked god but as I went up the cake the rosettes started to droop down!!!!! The frosting was to thin…. I put the frosting in the fridge for a bit but now it was to firm! Frustration is kicking in so after a few minutes I start again with no luck as the rosettes are not holding their shape, its at this point I start to flip out (patience is certainly not my strong suit) Vera runs in asking what’s wrong and I immediately yell at her to get the f@#k out, which of course makes me a bad person but in that situation there’s really nothing she can do. Finally I cooled down the frosting some more and finished the cake, I guess it looked decent however I wasn’t to happy with it. The flavors of the cake went well together and everyone seemed to enjoy it, let me know if you think my moms birthday cake looks good or needs some serious improvement. P.S. I apologized to Vera.
